Tom Kha Soup and Rhubarb/Berry Pie

This is yesterday's food account. Delish indeed!

Tom Kha soup:



You need:

App. 5 dl Water
1 can of coconut milk
Tom Kha spice mix bag
Like 200-400 g of chicken depending on how "foody" you want the soup to be
A tomato or so
Some mushrooms
(Frozen veggies if you want)


Practically you just let the water, milk and spice mix cook together then put in the chicken (and frozen veggies if you want to) and let the chicken get ready (I'm always on the safe side with chicken so I let it be for like 7-10 minutes). Then a bit later the tomatoes and mushrooms. Takes like 10-15 minutes to make and it's oh so good! Thanks Sofie for the soup tip ;)


My second food achievement of the day,
Rhubarb/berry pie:


You need:

Pie crust:
½ dl water
100 g of baking butter
2½ dl of flour
(Some sugar)

Mix the flour and butter and then put a little bit of sugar if you want to so the crust is also a bit sweet. Then add water and form a firm dough from it. Spread the dough in a form and put it in the oven (200 degrees) for 13-15 minutes.


Filling:
Rhubarb (and/or berries)
1 "can" of sour cream (kermaviili in Finnish, dunno for sure what it is in English)
½ vanillasugar
1-2 dl sugar
1 egg

Mix the egg, sour cream, and the sugars with each other and then mix in the rhubarb. Pour it on the crust and put the pie in the oven for 20-30 minutes until it's "firm". Serve with vanilla sauce or ice cream!
